Metabolomic profiling of pulp from three passion fruit varieties: Implications for postharvest quality and nutritional value

摘要: "Passion fruit (Passiflora spp.) is valued for its organoleptic and nutritional properties but exhibits wide variability in postharvest stability across varieties. This study investigated the biochemical basis of these differences by profiling pulp metabolomes and volatile compounds from three varieties: P. ligularis, P. edulis f. flavicarpa, and P. edulis, using untargeted LC-MS/MS and GC-MS. A total of 550 metabolites and 39 volatiles were identified, revealing variety-specific metabolic signatures. P. ligularis, which demonstrated the longest shelf life, had significantly higher concentrations of citric acid, ascorbic acid, and flavonoids such as naringenin and luteolin glycosides, as well as a favorable sugar–acid balance and terpene-enriched volatile profile. P. edulis exhibited elevated hydroxybenzoic acids and ethyl esters (e.g., ethyl butanoate), consistent with faster senescence, while P. edulis f. flavicarpa showed intermediate traits. These findings offer insights into the metabolic drivers of shelf life and provide molecular targets for improving postharvest quality and storage in passion fruit. •Metabolomics revealed 550 metabolites and 39 volatiles in pulp of passion fruit.•P. ligularis had low acidity, high SS/TA, and more flavonoids and organic acids.•P. edulis had more fruity esters; P. ligularis had terpenes with antimicrobial traits.•P. ligularis showed higher expression of antioxidant and cell wall-related genes.•Findings aid breeding and storage strategies to improve shelf life and quality."
