摘要: Five physiological disorder symptoms of Chiin Hwang (Mangifera indica L. Chiin Hwang) mango, i.e., soft nose, jelly seed, lumpy tissue, pitting necrosis and scorch, were investigated. Their contents of total soluble sugar, starch, α-amylase and mineral elements were analyzed in relation to their disorders. The results showed that the fruit with lumpy tissue had the highest level of starch concentration of 18.46%, and pitting necrosis the lowest level of Calcium (Ca) content of only 0.008%. The data indicated that fruit with different disorder symptoms had different chemical compositions. Lumpy tissue, jelly seed and soft nose may result from an uneven ripening rate during fruit development, which hampered the regular process of turning starch into soluble sugars and initiated a detrimental anaerobic respiration pathway. Fruit with pitting necrosis was the result of Ca deficiency which induced cell breakdown. |
